Whisk the egg whites in a clean, dry, metal or glass bowl until frothy, then add the cream of tartar and whip to soft peaks.

Whisk in the sugar a spoonful at a time, until thick and satiny. Fold in the salt, then spoon the meringue on to the baking tray in a roughly 23cm circle. Bake for 75 minutes — or until crisp on top but slightly squidgy in the middle when gently prodded — then turn off and leave to cool completely in the oven.

Whip the cream to soft peaks, then whisk in the yoghurt and vanilla, if using. Spoon on top of the meringue. Pile on top and serve immediately.
